Fajita’s with Baked Tofu

I have fallen in love with Trader Joe’s Extra Firm tofu! It has the best texture for baking (or frying, I suppose, if one were inclined to deep fry).

This time around I marinated it with cumin, fresh lime juice, cayenne powder, chili powder, salt and olive oil. I tossed the same marinade on slices of colorful* bell pepper and sweet red onion. Everything got baked until the veggies began to caramelize without going too soft. Then I stuffed them into 100% whole wheat tortillas and quickly toasted them in a skillet. YUM!

Everything was baked at 375F for about 10 minutes on each side. Add some queso fresco or a dollop of low fat sour cream and you are in heaven.

*One serving of red, orange or yellow bell peppers have more vitamin C than a serving of orange juice!
